Raw Banana Crepes

Crêpes are a versatile food that can be used as a sweet or savory dish, depending on the fillings.  I was inspired to create this dish after craving pancakes.  In true Loving Superfoods fashion, these crepes are loaded with nutrients, and low in calories.  Maca and Lucuma Powder are the two high quality superfoods in this delicious recipe.  If you find yourself overcome with anxiety, stress, depression or mood swings, Maca may help alleviate these symptoms.  In addition to satisfying your sweet tooth, Lucuma is gluten-free and a source of antioxidants, fiber, carbohydrates, vitamins and minerals necessary for bodily functions and of benefit to the immune system.


  • 2 or 3 Ripe Bananas
  • 3 tablespoons of Flax Seeds
  • 1 teaspoon of Maca
  • 1 cup of Soaked Walnuts
  • a dash of Nutmeg
  • 2 teaspoons of Lucuma Powder
  • a dash of Cinnamon
  • 1 teaspoon of Ground Vanilla Powder

Place contents in a processor or blender until the mix is a smooth liquid.  You may need to add a bit of water.  Next, line your dehydrator sheet with teflex.  Pour the crepe onto the sheet in a circular shape about 1/8 inch thick.   Dehydrate at 115 degrees for 3 hours, or more.  When the crepes are truly ready, remove them from the dehydrator, and carefully peel the crepe from the teflex sheet.


Place all of the cream contents into a high powdered blender, then refrigerate to set.  This cream reminded turned out to be quite like a chocolate mousse. I kept the cream refrigerated until the crepes were done dehydrating.  Most crepes are folded over, but I’ve decided to stack them vertically with cream and organic raspberries in between each layer.  Coconut flakes were sprinkled on top for a contrast of colors.  I hope you enjoy creating this raw recipe as much as I have.  Visit our products page to learn more about the super foods that were made in this recipe.  Enjoy!
