Chocolate Cookies

Crunchy Chocolate Cookies

I have tried about 5 different ways of making these chocolate cookies, and they are ALL good!  Here are 2 versions for you to work with, depending on whether you want soft, thin, crispy cookies or chewy cookies.  I usually prefer the former, but both are delish!

Thin, Crunchy Chocolate Cookies

1 Cup Buckwheat Groats (soaked and rinsed well)
1/2 Cup Chia Seeds (dry)
1 Cup Cacao Powder
2 Tbsp Ground Vanilla
1/4 tsp SunFire Salt
1 Cup Vanilla Agave Nectar
1/2 Cup Water
1 Cup Cacao Nibs marinated in about 1-2 Tbsp Vanilla Agave Nectar (optional, and preferred)
1/2 Cup Walnuts chopped (optional, and preferred)

Stir all the dry ingredients together in a bowl, until well mixed. Add the agave and water and mix well.  Fold in the cacao nibs.  Pour about 2-4 Tbsp of this slightly runny batter onto the Teflex sheet of your dehydrator and top with the chopped walnuts.  Makes about 20 cookies or so.  Dehydrate at 115 degrees for 5-8 hours, then flip over to the mesh sheet (peel off the Teflex) and dehydrate for another 8-16 hours (depending on how big you made the cookies … basically dehydrate them until they are dry).

Chewy Chocolate Cookies

1 Cup Buckwheat Flour
1/2 Cup Chia Seeds soaked in 1 Cup Water for about 10 minutes to gel
1 Cup Cacao Powder
2 Tbsp Ground Vanilla
1/4 tsp SunFire Salt
1 Cup Vanilla Agave Nectar
1/2 Cup Water
1 Cup Cacao Nibs marinated in about 1-2 Tbsp Vanilla Agave Nectar (optional, and preferred)
1/2 Cup Walnuts chopped (optional, and preferred)

Chewy Chocolate Cookies Ready to Dehydrate

Stir all the dry ingredients together in a bowl, until well mixed. Add the agave and water and mix well.  Fold in the cacao nibs.  Dollop about 2-4 Tbsp of this thick batter onto the Teflex sheet of your dehydrator and top with the chopped walnuts (you may want to press the batter into round shapes).  Makes about 20 cookies or so.  Dehydrate at 115 degrees for 5-8 hours, then flip over to the mesh sheet (peel off the Teflex) and dehydrate for another 8-16 hours (depending on how big you made the cookies … basically dehydrate them until they are dry).

Other Variations

I’ll give you a hint for ways to play with other variations of these cookies: try a mix of buckwheat groats and buckwheat flour, and even adding in some of the ingredients we put in the Cosmic Chocolate Balls.  No matter how you make them, everyone who tastes the chocolate cookies will want more, so you may want to start tripling the recipe … that’s what I do!
