These protein and green rich treats are so delicious! We’ve shared a few with our friends and received comments like:
“wow, that’s like a densely nutritious breakfast in a bite!”
“Oh my goodness these are so good, I actually have goose pimples all the way down my arms and legs!”
(She then proceeded to do a happy dance) : )
We like them so much that we’ve now started doubling the amounts in the recipe below in order to make them last through more of the week (we eat them every day right now).
Green Machine Macaroons
1 Cup Shredded Coconut (finely cut for macaroons is best, but anything smaller than the wide cut flakes will work fine)
1/4 Cup Almond Flour
1/4 Cup Sun Warrior Protein Powder
1 Tbsp Vitamineral Green
1 Tbsp Spirulina Powder
1 Tbsp Mesquite Powder (optional – makes a great spiced macaroon)
1 tsp Ground Vanilla
pinch of SunFire Salt
1/4 Cup Vanilla Agave Nectar or Honey
Mix all the dry ingredients in a bowl. Add in the sweetener, then the oil. Stir and massage with your hands until the dough is moist. Roll into ball shapes and place on a plate. Refrigerate for at least 30 minutes before traveling with them, or store them in the fridge.
If made with cacao butter these can be stored at room temperature (though they will last longer if kept in the fridge).
