Oh My! Superfood Sweet Potato Pie


When we think of comforting winter foods, sweet potatoes are always high on the list, as they are inexpensive, readily available, and delicious!  Sweet potatoes are a good source of mag­nesium, which is the relaxation and anti-stress mineral…something we can all use during the holidays.   The crust for this sweet potato pie could easily be used for other pie recipes.

Superfood Sweet Potato Pie

CRUST:

  •   2 Cup Walnuts
  • 1/2 Flax Seeds
  • 3/4 Teaspoon Ground Cinnamon
  • 1/8 Teaspoon Ground Nutmeg

 

SWEET POTATO FILLING:

 

  • 3 Cups Peeled and chopped Sweet Potato
  • 1 cup Coconut Butter (Artisana Coconut Butter is the brand we used)
  • 3/4 Cup Water
  • 1 Tablespoon Ground Cinnamon
  • 2 Heaping Tablespoons of Maca
  • 1/2 Teaspoon Grated Fresh Ginger
  • 1/4 Teaspoon Ground Nutmeg

 

WALNUT TOPPING

  • 1 Cup Walnuts, roughly chopped
  • 1/2 Teaspoon Ground Cinnamon
  • 3 Tablespoons of Coconut Flakes

 

To make crust, place the walnuts in your S-blade food processor, and finely chop the walnuts and flax seeds.  Add in the remaining crust ingredients next and process until sticky.  Press into the bottom of a 9″ spring form pan, and place in the freezer to set.  For the filling, place all ingredients except for the sweet potato in a high speed blender and blend until well combined. Add the sweet potato and blend again until smooth.  Pour over the crust, and place in freezer to set for an hour, then add topping.  Enjoy!
